  1. Recnetly at the Bistro it was Italian week. We had received about 70 orders and we were extremely busy all day. I ended up missing most of my sixth class due to the business. I got two free meals out of my work though.

  2. Yesterday was a bread baking day. All of the freshman in the class were standing about doing absolutely nothing while there were dishes to be done and tables to be cleaned. My hands were pruny for three hours due to the amount of dish-washing I did.

  3. Not much happened Monday. Those of us who had paid dues were able to make bread dough while the others had to sit in the classroom doing book work. I wonder when they will start getting serious about cooking and pay their dues.

  4. February 10: Bistro was a bit slow all day but we got plenty of deliveries. The biggest hit was the Biggest Loser chef salad, which we did to support the teacher's competition with each other.

  5. We started doing a project in culinary last week involving finding information on a country of your choice and cook one or two of the native foods. My group picked India.

  6. Today we finished cooking our ethnic foods and my group made Spicy Chicken Curry and Indian Sweet Bread. I can't believe the curry wasn't all that spicy considering the amount of chili powder I put in there.

  7. We were making breakfast burritos in the bistro yesterday and the day before that it was chicken noodle soup day. On the soup day, I was doing the laundry and observing the students under me. I say under me because Chef has made me "Sous Chef", which gives me authority over the students; although one can't have authority over others unless the ones you have authority over gave you that authority. Anyways, I was observing and most of the students were not doing the work that they were assigned and so today, Thursday, they are cleaning all day.

  8. Not much has been going on at the bistro. All I have been doing is doing the laundry or the dishes altough this is the first week back in school since spring break. Next week we have a breakfast buffet bistro.

  9. The breakfast buffet bistro was a huge hit! We had almost no food left over for the students who worked. I wonder what our next bistro will be. Oh, by the way, I have noticed that i get more respect around school nowadays. What has gotten into the students here?

  10. Next week is a deli buffet bistro. I got to use the meat slicer for the first time. The reason this is my first time using it is because you have to be eighteen in order to use it becuase you can lose a finger using that piece of equipment. Chef told me a story where a guy was careless and turned on the meat slicer and cleaned it while it was going. The blade pulled in the rag and with it, the guys finger. He was rushed to the hospital and they were able to reattach the finger but i bet he learned his lesson.

  11. there was soo much food left over from bistro that chef is actually going to have another bistro tomorrow. sure the food wont be as good but it will still be a good bistro. I am probably going to eat my weight in sandwiches by the time this bistro is over.
